Community Update


Here is Mondays Meatless recipe I promised you.
Sweet Potato Black Bean Quinoa Burger:
1 Medium onion,diced
1/2 chopped red pepper
1/2 cup thawed frozen corn
3 Cloves Garlic, minced
1 can black beans rinsed and drained,then mashed.
1/2 cup cooked Quinoa or any other grain.
1/2 cup rolled oats
1/2 cup bread crumbs,gluten free if needed
2TBSP tomato paste 
2 TBSP chili powder
2tsp cumin.
1 tsp oregano
1 tsp onion powder
Make up Quinoa or grain according to directions. 
Saute onions and red pepper in water until soft. Let cool. Mix all of the ingredients together by hand is best. If it is too wet add bread crumbs or more oats. Make into patties not too thick. Placed on lightly greased cookie sheet and bake at 350 for 20 minutes on one side then flip burgers over and bake for another 15 minutes. Remove from oven, let cool then serve or wrap and freeze or refridgerate. 
I make this and will crumble them cold on a salad, or put them in a wrap. You can do a traditional burger on a bun or serve over a grain like rice or Quinoa.
