Curried Cauliflower and Chickpea Stew


Curried Cauliflower and Chickpea Stew
Ingredients:
2& 1/2 cups chopped onions
5 tsp curry powder
6 cups small cauliflower florets(1 medium head)
2 15 oz cans Garbanzo Beans drained
2 10 oz cans diced tomatoes 
1 14 oz can unsweetened coconut milk( Giant or Davids)
1/2 cup chopped fresh cilantro
Saute onions in water or oil until translucent. Add curry powder stir 20 seconds. Add cauliflower and garbanzo beans stir 1 minute. Add diced tomatoes, coconut milk and bring to a boil. Reduce heat to medium low. cover and boil gently until cauliflower is tender and liquid thickens slightly. Stir occasionally for 15 minutes. Season with pepper and salt to taste. Stir in cilantro and serve over brown rice or grain of your choice.
