New Monday Recipe Layered Tex-Mex Lasagna


The Recipe this week is Tex Mex Lasagna:
1 can Rotel(at Giant)
1 8 oz can Tomato Sauce
3 Cups Water
4TBSP Cornstarch
3 TBSP Chili Powder
1 tsp onion powder
1/2 tsp garlic powder
Place aal of these ingredients in a sauce pan. Mix well. Cook over medium heat until thick. Taste and add more Chili Powder if needed.

10-12 Corn Tortillas
4 cups mashed Pinto Beans
1 Chopped green onion( I used yellow onion and green peppers)
1 1/2 cup Frozen Corn thawed
1/4 cup sliced olives, any kind
I used Non Dairy Daiya Cheese
Mix together Beans, onion,corn,olives. Place 1 1/2 cup of sauce in the bottom of a casserole dish,Place3 -4 corn tortillas over the sauce,Spread half of the Bean mixture on top of this then some of the nondairy cheese. Cover with a little sauce,then tortillas,bean mixture and top with corn tortillas. Spread the remaining sauce over the casserole. Cover the dish with parchment paper,then foil and bake in 350 oven for 45 minutes. Let cool 10 minutes before slicing. Top with salsa. Enjoy! Great as a left over too.Like ·  · about a minute ago
