Help Me Cook Thanksgiving Turkey

I'm in charge of the turkey this year. Help!

My mother-in-law is Italian. She's a great cook. This year, however, I volunteered to cook the turkey at Thanksgiving at her house in Latrobe, PA. I've never cooked a turkey, let alone taken over Lydia's kitchen during a holiday to cook the main dish. I have, however, purchased sliced turkey for sandwiches at the supermarket deli counter. But I don't think that's going to cut it.

You probably don't know me, so why would you help? I'm Doug Donovan, the Patch regional editor that has overseen Bel Air Patch and the other Harford County Patch sites since they launched more than a year ago. I'm helping out in Bel Air while Kirsten finishes her company training this week. 

You can enter your tips and/or recipes into the comment section. For starters I'll be contemplating these recipes from a writer in a rival Patch site.

Google Alton Browns turkey recipe from the Food Channel. It requires a little work brining the turkey the day before, but it really comes out moist with crispy skin.

Thanks. Will do. I've been trying to decide if I cook it here the day before or if we should travel a day early. Not sure how Turkey transports. I've transported a bushels of crabs out there before, but that's not quite the same thing.

Here's the method I've used for years. It's fast so you won't have to cook it the day before. If you want the skin crisper, unwrap the top part of the foil 30 mins before the end of cooking time. Foil Wrapped Turkey http://www.globalgourmet.com/food/foodday/fd1197/fd112197.html#foil#ixzz1dxh8w9EY
